What is first person and what is third person?
Well I think I don't need to explain much about this as its meaning is very easy to grasp from the word:
First person is a kind of narration from the first person perspective, and third person is from the viewpoint of the third person.
But in the gaming terms, first person means the gamer could see the world via the eyes of the character; in the same logic, third person means you see the character and the world from the third person perspective.
Most of the RPG don't use the first person as the way of narration, although it could be more realistic as you see what a character will see in a game. Because the story could have more than one character/protagonist, so this kind of narration will make the gamer hard to see the full picture of the story; but instead, we could use the third person view to make the gamer could see the picture from different perspective.
That's the reason why majority of the shooting games are using first person view as the gamer could have a better experience as if they were right in the scene like the photo shown above. Also, the second advantage is that, the gamer could aim the target more easily via this view. (actually, you couldn't able to "aim" as in a third person perspective)
Some of the action games even combined the elements both of the view to create a excellent sensation for a gamer. Both of the viewpoints have their own advantages for different game.
